Banana Chocolate Chip Muffins Recipe


I researched a lot through the Internet and Laura Vitale's is so far the easiest recipe for me so far. For me, I guess Banana Chocolate Chip Muffins are considered healthy since banana is a fruit ? Unlike most people, I used a microwave oven since I don't own a normal big sized oven, so I used a muffin tin with only 6 moulds and doubled the time as this recipe makes a dozen muffins.

Ingredients:
½ Cup of Vegetable Oil
2 Eggs
½ Cup cup of Sugar
3 Mashed Bananas
¼ tsp of Vanilla Extract
1 2/3 Cup of All Purpose Flour
1 tsp of Baking Powder
½ tsp of Baking soda
¼ tsp of salt
1 Cup of chocolate chips

Procedure:
  1. Preheat your oven. Line the muffin tin and set aside.
  2. In a small bowl, add the chocolate chips and 3 tbsp of flour and mix until all the chocolate chips are coated. Set aside.
  3. In a large bowl, add the first 5 ingredients and mix thoroughly.
  4. Next, add the flour, baking soda, baking powder, salt and whisk it until it is all combined.
  5. Add in the chocolate and flour mixture.
  6. Use a spoon and divide the batter into the muffin pan evenly and bake for about 20 minutes (check the muffins during the last 5 minutes to make sure it is just right).
